RECIPE: my favourite porridge recipe: apple pie flavoured porridge

I love have porridge for breakfast, especially in the winter when the days are colder. For me porridge is everything a breakfast should be: filling, quick, cheap and tasty. I have tried many porridge toppings of flavours, but this one remains my absolute favourite: apple pie. I know you could use apples in stead of applesauce, but this version is just so much quicker. I do not have the patience to cut up an apple every morning.

For my convenience I tend to buy cups of applesauce, those are a perfect serving seize. However, if you want to save extra money, you could of course buy a large jar and scoop it out with a clean spoon. Sometimes I have this with homemade applesauce and that makes it even better: homemade applesauce is a bit tarter, which is lovely next to the sweet porridge.

Of course, you can customize this recipe to your liking: add raisins, cranberries, nuts and seeds if you like. If you prefer using a different milk (cow’s milk, almond milk, rice milk) I think it would work just as well, but I do recommend using a sweetened version of your plant base milk. I personally think coconut milk would not be a very good combination, but if you try it and you love it, let me know! Enough chit-chat, let’s make this porridge!

Ingredients:

  • 50 grams of oatmeal
  • 250 mL of sweetened soy milk (or any milk you prefer)
  • 100 grams of applesauce
  • A sprinkling of cinnamon
  • Nuts, seeds or raisins to your liking

Instructions

  1. Add your oatmeal and (soy) milk to a mug or bowl
  2. Microwave for 2-3 min. on high, keep an eye on it so it doesn’t boil over
  3. Scoop your applesauce on top
  4. Add a sprinkling of cinnamon
  5. Add nuts/seeds/raisins if you like
  6. Enjoy!
